This recipe for Roasted Rosemary Truffle Almonds begins by gently oven roasting blanched almonds to bring out the flavor of the nuts.

Next, they are drenched in a combination of truffle oil and dried rosemary. The truffle oil adds an earthy, sensuous flavor that only truffle oil can deliver. Rosemary balances the earthiness with herbaceous overtones. 

Finally, a generous sprinkle of sea salt adds the final addictive quality. The nice thing about making this snack at home is that you can regulate how much salt is added.

The Inspiration

Who loves those awesome Rosemary Truffle Marcona Almonds from Trader Joes? Both hands up for me!

I wish I had a Trader Joes nearby to pop in and get a package every time a craving hits. 

Unfortunately, I live in the middle of nowhere.  My horse-loving, and non-social parts of my personality love living in a rural area.

I also love the fresh eggs from my own hens and great produce from the local farmer’s markets.

Sometimes, however, one small part of me would love to live closer to great grocery stores. Instead,  I make do with regular orders to Amazon and limited trips to the grocery store to “stock up”. 

Since I can’t just pop into Trader Joes anytime I want, I decided to make a copy-cat recipe so I can enjoy the flavor combination of almonds, truffles, and rosemary more often.

Tips and Tricks

This recipe is super-easy and hard to mess up. Just be sure that you watch the almonds carefully as they are roasting. The goal here is to get them a shade darker and bring out their flavor. As they heat, they will begin to release their natural oil and will appear to “sweat” a bit when they are ready.

If you roast them too long, the nuts can get bitter. In addition, the toasted flavor may overwhelm the flavor of the truffle oil. 

Finally, be aware that all truffle oil is not created equally. I find there is a big difference in how strong the flavor is. My advice is to start with a small amount and add more if you want a stronger flavor.

I used white truffle oil in the recipe, but if you want a more earthy flavor, you may want to consider black truffle oil.

Final Words

These Rosemary Truffle Almonds make a great snack by themselves. Like our Low-Carb Candied Pecans also make a great addition to a holiday party appetizer tray. I also love using them to add crunch and flavor to a salad like I would our Low-Carb Garlic Parmesan Croutons. Enjoy!

  1. Preheat oven to 350º Fahrenheit. Spread raw almonds on a large heavy steel baking sheet.

  2. In a small mixing bowl, stir together the truffle oil and the rosemary leaves.

  3. When oven has preheated, bake the nuts for about 5 minutes. Stir and return to the oven until they are a shade darker (than they were when raw), and they appear to be sweating oil, about 3 to 5 minutes. Do not over-toast.

  4. Stir the hot nuts into the truffle oil mixture until they are evenly coated with oil.  Taste and adjust the amount of truffle oil if necessary. Sprinkle with sea salt to taste.
