Carrot Cake Energy Balls. As in energy balls that taste like carrot cake….as in little blissful bites that are like indulging in a big ol’ slice of cake…as in your new favourite treat!

Oh yessss friends. I’m super excited about this energy ball recipe today because I LOVE carrot cake. Anything from actual carrot cake, to carrot cake cupcakes, to carrot cake loaf, I’m there!

What are energy balls?

If you’ve never made energy balls before, it’s time to hop on the bandwagon! Seriously.

Energy balls are *sort of* like a granola bar, but rolled into a ball. They are often made with dates or some other type of dried fruit and some type of nuts, seeds, grains (like oats) and flavouring.

I’m a big fan of making energy balls on meal prep days because this little snack is a SAVIOUR for that 3 pm afternoon slump. Not to mention energy balls are super easy to make and usually require either just a bowl or a food processor to mix everything together.

How to make Carrot Cake Energy Balls:

Another thing I love about making energy balls is that they are SO easy to make! They are no-bake (can I get an amen!), and usually only require either just a bowl or a food processor. In the case of this recipe, we’re going to be using a food processor since we need to process the dates. The whole process can pretty much be broken down into 3 steps:

  1. Puree the ingredients together
  2. Roll into balls
  3. Roll in shredded coconut

and…you’re done!

A few notes on the recipe:

This recipe calls for Medjool dates, which tend to be stickier than regular dates. If you’d like to use regular dates to make this recipe and your dates feel a bit dry, I’d recommend soaking them in hot water for 5 minutes, draining and then proceed with the recipe. (This will add some moisture back into the dates and help all the ingredients bind together!)

If you don’t like walnuts, you can pretty much substitute them for any other type of nuts you like, or even oats if you want to avoid nuts entirely!

You can also add in any extra ingredients you love to this versatile recipe. Dried fruits, chocolate chips, cocoa powder…whatever you like!

  1. Add all the ingredients to a food processor and pulse until combined.
  2. Scoop out some dough using a spoon and roll into balls. 
  3. Roll each ball into the shredded coconut to coat. 
  4. Place in the fridge to firm up for at least one hour
