How to make taquitos:

One nice thing about Mexican food is that it gives you a lot of different ways to combine the same ingredients. Like, if you’ve got shredded chicken, avocado, tomato, and cheese, you can serve them in a soft taco…roll them up into a burrito…or leave out the tortilla and toss it all over some greens to make a taco salad.

These are kind of like the Mexican equivalent of an egg roll – tasty fillings rolled up inside a crispy wrapping. But they’re even easier to make, because they’re baked, not fried. No hot oil to splatter around, no moving stuff in and out of the pan. Just wrap up your chicken filling in the tortillas, lay them out on a baking sheet, and bake them for 15 minutes. They’ll come out golden and crisp, just the right size to pick up with your fingers and bite into like a hot dog.

For the chicken, you can use rotisserie chicken, or my Easy Instant Pot or Crockpot Shredded chicken.

Oh, and the avocado and tomato? Just serve those on the side, along with salsa, sour cream, chopped cilantro, or any other topping that strikes your fancy.

Easy Homemade Chicken Taquitos

Directions:

  1. Preheat the oven to 425 degrees F. Line a baking sheet with aluminum foil and spray with cooking spray. In a bowl mix together chicken, cheese, and spices.Easy Chicken Taquitos - shredded chicken, cheese with seasoning in a glass bowl
  2. Wrap corn tortillas in a damp paper towel and microwave for 1 minute so that they are soft and pliable. You can heat them again later if needed.

  3. Roll the tortilla up around the mixture and secure with a toothpick. If the tortillas become difficult to roll just wrap them in the wet paper towel and pop them back in the microwave for about 30 seconds.Easy Chicken Taquitos - rolled up taquitos on a baking sheet

Ingredients

  • 1.5 cups shredded Mexican cheese blend
  • 1.5 tsp chili powder
  • 1 tsp cumin
  • ½ tsp garlic powder
  • ¼ tsp onion powder
