Lime – Chia seeds cake

You need-

  • All purpose flour – 1 ¾ cups
  • Baking powder – 1 teaspoon
  • Salt – ¼ teaspoon
  • Chia seeds – 2 tablespoons
  • Butter – 115 grams
  • Sugar – 1 cup
  • Eggs – 2 nos
  • Milk – 2/3 cup
  • Juice of 2 limes
  • Zest of 2 limes
  • Vanilla extract – 1 teaspoon

How to –

Pre-heat the oven to 180 C.  Grease and line a 9×5 loaf pan. Sift/whisk the flour, baking powder, salt. Add in the chia seeds and mix well. Set aside.

Cream the butter and sugar together in a bowl until light and pale. Beat in the eggs one at a time and stir in the vanilla extract.  Fold in the flour, alternating with the milk. Add the lime zest and juice. Mix gently till everything is well combined. Make sure not to over mix the batter else they will not be light and fluffy when you bake.

Pour the batter into the prepared pan and bake for 35-40 minutes or when toothpick inserted in the centre of the cake comes out clean. Set aside to cool for 10 minutes, then remove from the tin and cool on a wire rack.
